Fiery Bean Soup

A delicious tomatoey soup with added chilli heat
This is such a simple soup, made from beans, tomatoes and a fiery combination of cayenne pepper and cumin. Combined with a zesty squirt of lime and the salty crunch of tortilla chips, it makes a wonderful winter warmer! Did I mention that it's vegan?!

Ingredients
- 1 tbsp rapeseed oil
- 1 large onion, finely chopped
- 1 garlic clove, crushed
- 1 tbsp tomato purée
- 1 tsp ground cayenne pepper
- 1/2 tsp ground cumin
- 400g tinned chopped tomatoes
- 200ml water
- 500ml vegetable stock
- A pinch of sea salt
- 400g tinned mixed beans
- 1 red bell pepper, diced
- 1 lime, cut into quarters
- 200g salted tortilla chips
Method
- Put the oil in a large, deep pan and place over a medium heat. Add the onion and cook until tender, being careful not to burn it.
- Add the tomato purée and garlic and stir continuously for one minute. Add the cayenne pepper and cumin and stir until the onion is evenly coated.
- Add the chopped tomatoes, water and sea salt, and stir well. Then add the vegetable stock, stir again, and simmer for 15 minutes.
- Using a hand blender, blitz the soup base until it is smooth and there are no pieces of onion or garlic remaining.
- Add the beans and red bell pepper, then simmer for 15 minutes.
- Serve in bowls with a squirt of lime and 50g of the tortilla chips per serving.
